Spinach with Rice a.k.a Spanakorizo

Spinach with Rice a.k.a Spanakorizo  As difficult as the name might sound it's a super simple classical Greek dish filled with bursting flavors and nutrients. My kids who are picky eaters really love Spankorizo and not as a side dish but as their main course. Spinach is healthy, it's filled with fiber and antioxidants. If you like to add some zest to this recipe, squeeze fresh lemon on top of it, the lemon helps our bodies absorb the iron in the spinach, such a tasty and beneficial dish for the whole family! This Spinach with Rice recipe, the simplicity in this dish, will have you eating in 1/2 an hour. When I make this, I serve it as a  side dish with fish, poultry or meat. Spinach with Rice a.k.a Spanakorizo can become your go-to comfort food with no guilt. Spanakorizo has a variety of herbs you can choose from it all depends on what you like to add to your dish. I must say I am one lucky girl to have been born in the Mediterranean diet,  so many tasty and hearty vegetable dishes that are not only easy but healthy as well, and maybe it's the answer to longevity. My grandparents must have known something, they were able to see great-grandkids. 

If you want to be really Greek with this dish serve it with lemon, feta cheese, olives and a delish tomato salad! If you like a spicy Feta always choose Kefalonia Feta or Chalikidiki Feta I only recommend foods I have tried and worked.

TIP: 1. Sometimes Greeks top it with a fried egg( personally, I really don't like it this way) My eggs go with fries.

2. You can eat this either hot or at room temperature

3. I usually make this dish with fresh spinach although it's ok to use the ready cut in a bag Spinach, fresh is always better.

NOTE:  I only suggest ingredients and products that I trust and I have used in my recipes.

Feta Cheese Epiros is Good but I prefer a spicier Feta which is the Kefalonian Feta and Chalikidi Feta

  • 600 grams Spinach
  • 250 grams cleaned and chopped onions
  • 2 tablespoons dill
  • 2 tablespoons fresh onions (scallions)
  • 2 tablespoons chopped parsley
  • 1 medium diced onion
  • 2 garlic cloves minced
  • 360 grams medium grain rice works best, I use long grain, I like it better
  • 300 grams feta cheese
  • 1 whole lemons
  • 1 liter water
  • 200 grams olive oil

salt and pepper to taste


Saute onions, fresh onions and garlic cloves in 100 grams olive oil

Then we add dill and parsley continue to saute for about 2 minutes

Add the spinach and saute until it's volume decreases,

Lastly, add the rice and continue to saute for anoth 2 -4 minutes. The medium grain gives it a smoother texture.I prefer the long grain rice.

When Spinach has reduced in size add water and allow to boil on medium heat 20 -30 minutes.

When ready squeeze fresh lemon and drizzle with remanining olive oil.
