The baby potatoes but them at your local store

Oregano or this Oregano






  • 2.2 pounds Baby Potatoes
  • 1 teaspoon oregano
  • 6 cloves garlic (chopped)
  • 1 tablespoon rosemary
  • Salt & Pepper to taste
  • 1/2 cup Olive Oil
  • 1 tablespoon fresh mint (optional)


  1. Fill your sink with water add your potatoes to the water and scrub them very well with your kitchen sponge. Make sure all the soil is off. Place in your colander allow for them to drip. When they are ready, slice them halfway (Don't halve) and add them to your pan.

  2. In your pan add all the ingredient and mix very well. Leave your olive oil for last. You can also throw one or two garlic whole in the pan. Once you have mixed everything very well spread the potatoes evenly in the pan. Add your olive oil and water

TIP: I also add a 1/2 cup of water you

Cover with parchment paper, bake at 400 Farenheit for about 45 minutes or until baked nicely with a golden color and a crispy outside.
