When I prepare my carbonara pasta, I think of panoramic views of sun-washed beaches with emerald waters that sparkle when hit by the sun. Why, may you ask? Because I was living in a cosmopolitan village, Paleokastritsa, Corfu Greece. It’s here that I received caliber catering service and Carbonara Pasta was prepared for me by my cousin whose culinary expertise touched excellence. I want to thank her for introducing me to this dish and in turn, I am sharing it with you. They are different ways to prepare it but for the past 20 years and after trying several ways , I choose this one and I hope you do too!
TIP: The secret to achieve perfect Carbonara Pasta is in the cream and make sure all your ingredients are good quality!
- 1 package spaghetti No.6
- 1 package heavy whipping cream ( good quality)
- 1 whole egg
- 6 – 8 slices of bacon diced
- 8 slices ham diced
- 1 onion diced into small pieces
- 3 tablespoons parmesan cheese
- 1 can of sliced mushrooms
Gather all your ingredients together that way you will have everything together when you start cooking, works perfect for this dish.
Once you have all your ingredients together, take your pot, add your butter, your diced onion,set on high heat and sautee until onions are transparent.
Next, add the bacon and saute for about 5 minutes, keep adding butter as you go. Add your ham, saute for another 5 minutes, then add the mushrooms saute for another 5 minutes.
Finally add a whole egg and scramble everything together ( still on heat) Keep stirring until egg is cooked. Add salt & pepper to taste and set aside.
Now, boil your spaghetti as per package directions,I prefer to make them al dente. Drain your spaghetti and add them to the ingredients that you have set aside. You can also boil your spaghetti while you are preparing the carbonara sauce. When your spaghetti is ready add it to the sauce, as seen in the above picture, sprinkle with salt, pepper and parmesan cheese. Add your heavy whipping cream and mix all ingredients together. You carbonara pasta is ready!
