The month of September here in Greece has to be one of my favorites months because it just has so much to offer. The tourist season is winding down and everyone is slowly getting ready to stock up on their winter goodies, walnuts, figs, grapes, wine, and anything else their rich land gives them. September is called Trygos ( grape harvesting month). Once the grapes have been harvested and the grape must has been collected or mousto as we call it in greek. We can start to make our delicious goodies like grape molasses or petimezi, it was used in ancient times as a natural sweetener, grape must cookies, moustokouloura or grape must pudding- moustoalveria , teaspoon sweets and I can go on for hours on how to use grapes. Nowadays, petimezi is used is used to spike up sauces that accompany meat dishes like pork and lamb. So, one tiny fruit a variety of delicious uses and I love all of them!
Don't worry if you don't have a grapevine, go out and buy some grapes pass them through your juicer and now you have grape must to use.
Grape Must Cookies - Moustokouloura are my best loved traditional cookies, excellent for dipping in in your coffee, your milk or anytime of the day. Generally they are made with olive oil so they are considered to be a vegan cookie as well. Sugar Cookies - Health Food Recipes Grape Must Cookies a.k.a Moustokouloura
- 200 grams grape must
- 150 grams petimezei
- *100 grams orange juice
- 200 grams corn oil
- 200 grams sugar
- 1 1/2 tspn baking powder
- 1 tspn cloves
- 1 tspn nutmeg
- 1 1/2 tspn cinammon
- *200 grams raisins
- 850 grams all purpose flour
- 100 grams extra all purpose flour
Whisk corn oil with sugar ( I didn't use olive oil because corn oil is lighter) make sure the sugar has melted.
Mix flour, baking powder,cloves, nutmeg,cinammon, and raisins together. Add your liquids and knead until it's smooth. I reserved 100 grams extra of flour. Although, I used it I advise you not to because the cookies become a bit dry.
Some people also add cocoa., I don't like to add cocoa to these cookies.
* for the orange juice you can substitute milk.
* If you would like you can also add 100 grams of honey, it makes the cookies softer then you might need the extra flour.
* If you don't like raisins you can omit them.
Once you have finished kneading smooth it out and start making your cookies. I roll out a cylinder not to thin and I cut out pieces and make rings. If this doesn't work out for you use a pipping bag.
When you have finished line them up in baking pan of course place a baking sheet inside. Bake them at 180 celcius for about 20 minutes.
When they are baked take them out set them on a rack to cool. If you like you can sprinkle them with confectioner's sugar I prefer them as is. Cover them or place them in abag so they can remain soft.
