Mag’s Bechamel Rice Pie

I have been cooking for many years and my most convenient food for the whole family is pie, chicken pie, potato pies, cheese pies etc.  and of course, the fact that I’m Greek, pies are a staple of the Greek cuisine.  Pies are a convenient food because, you make a whole pan and everyone can cut, carry and eat with no hassle and no plates to wash 😉   Over the years and after acquiring some cooking expertise I have come to create my own recipes one such recipe is: My Bechamel Rice  Pie without a crust,  it’s a favorite amongst my family and friends. On special occasions, I’m always asked to make this pie. I hope my Bechamel Rice Pie becomes your family’s favorite too!

Ingredients:

1 1/2 measuring cup of boiled rice

9 measuring cups of milk

*18  tablespoons all-purpose flour

1/2  pound  feta cheese ( my preference Kefalonian Feta)

250  grams of cottage cheese (optional)

3 tablespoons parmesan cheese

3 tablespoons butter

3 eggs beaten

1 extra egg for brushing pie

Instructions for Bechamel:

* For each cup of milk, you need two tablespoons of flour.

Add flour in milk and stir until flour has been dissolved completely. Place pot on medium heat and stir constantly until bechamel thickens when it thickens, remove from stove. Add 3 beaten eggs, butter, parmesan cheese and, rice – mix well.  Crumble your feta cheese and add to mixture. Lastly, add your cottage cheese and once again mix very well. Preheat your oven for 20 minutes prior to baking. Butter a pan and add your mix in the pan and even out using a spatula, once you added you mix in the pan beat an egg

Add 3 beaten eggs, butter, parmesan cheese and, rice – mix well.  Crumble your feta cheese and add to mixture. Lastly, add your cottage cheese and once again mix very

well. Preheat your oven for 20 minutes prior to baking. Butter a pan and add your mix in the pan and even out using a spatula, once you added your mix in the pan beat an egg and brush the top of pie make sure egg has covered the whole pie. You do this to add color to your pie.

Cook in the oven at 375 Fahrenheit for 20 – 30 minutes. When ready remove from oven cover with a towel and wait until it cools down to serve. Your family will surely love it!!!
